Peanut Butter S'more Nibblers

Last Ayyam-i-Ha Lauren and Raf sent us a delicious treat in the mail. CLICK. It was a jar of ingredients and directions for making baked s’mores. This year I thought I’d try making it as an Ayyam-i-Ha gift for a friend. I doubled up the recipe which I think used too much butter. The result is a super rich, decidedly super bad for you, delicious mess of chocolate, peanut butter and marshmallow.

Because it was so rich, I decided it made more sense to cut it into small little bite-size nibblers. This stuff is so hard to resist. I mean, come on! It’s chocolate, peanut butter, graham crackers, butter and marshmallows. How can you not want to eat the whole pan?! I’m such a sucker for anything peanut butter infused.

The smaller size is better for little ones, if you don’t want them eating their weight in sugar. Let them decorate the tins for loved ones and friends. Ideas include using stickers, sharpies, paper, glue and glitter. I just used decorative tape.

If you want to make it yourself:

3 cups graham cracker crumbs (two sleeve of crackers, crushed)
3 cups miniature marshmallows.
Or substitute with 16 Peeps and 1 cup miniature marshmallows for seasonal fun.
1 1/2 cups chocolate chips or mini Hershey Kisses or M&M’s
1 1/2 cups peanut butter chips (Get them from Wholefoods – the real peanut butter kind, not the waxy crappy kind you get from the normal grocery store. It changes the flavor, I swear!)2/3 cup brown sugar
1 cup melted butter (2 sticks)
2 tsp vanilla
a dash of salt

Crush graham crackers. Mix these in a bowl with the chocolate chips, peanut butter chips, brown sugar, melted butter, vanilla and salt. Press mixture into a 9″ x 13″ glass baking pan. Place marshmallows on top. Bake at 350F for 25 minutes. Let cool completely. Cut into bite-sized nibblers and place in paper. Try not to devour before you give them away. Good luck.

You can get these little white tins from Michaels in the gift bag and tissue paper aisle. I was able to fit 2 layers of nibblers in each tin which I separated with parchment paper. These will stick together if they are not separated so make sure to take care when packing them up.
